"Applications of Biotechnology in Seafood Processing"
On December 9 in Can Tho City, Jebsen & Jessen (Vietnam), in collaboration with Amano Enzyme and Can Tho University, successfully organised a customer seminar themed “Applications of Biotechnology in Seafood Processing.”

The seminar was honoured to welcome experts from Amano Enzyme Asia Pacific, including:
• Dr. Fukuzawa – Managing Director, Amano Enzymes Asia Pacific
• Mr Tanaka – Sales & Marketing Director, Amano Enzymes Asia Pacific
• Mr. Pham Duc Thuan – Country Representative of Amano Enzyme in Vietnam
A key contribution to the success of the seminar came from in-depth technical presentations delivered by:
• Mr. Phan Thanh Loc – Chairman of the Board & Chief Executive Officer, Vietnam Food Joint Stock Company
• Dr. Truong Thi Mong Thu – Faculty of Fisheries, Can Tho University

The seminar was further enriched by the presence of distinguished delegates, including the President and Vice Presidents of Can Tho University, all reputable professors in the field, leaders of applied biotechnology research centres, and Mr. Vu Nguyen Thanh, Director of the Food Industry Research Institute under the Ministry of Industry and Trade.
Key Highlights of the Seminar
The seminar focused on critical topics and significant research outcomes, including:
• The effective application of enzymes in Vietnam’s food industry, particularly in meat and seafood processing.
• Mr. Phan Thanh Loc shared comprehensive insights into the potential value of seafood by-products, along with the challenges and opportunities in utilising these raw materials. His presentation emphasised the importance of enzyme optimisation in generating high-value-added end products with strong practical applicability.
• Dr. Truong Thi Mong Thu presented applied research on the use of Amano enzymes in protein hydrolysis of fish and fishmeal, as well as advanced biotechnological applications such as collagen and gelatin hydrolysis. These solutions contribute to the development of products with high bioavailability, meeting the growing market demand.

The seminar attracted active participation from customers, industry enterprises, representatives of local authorities, as well as faculty members and students of Can Tho University. This created a dynamic professional exchange platform and opened up numerous opportunities for future collaboration.
